The second method instead exploits iCloud, and in that case it is started even without connecting the smartphone to the PC. It is essential to have enough space available to save the file, otherwise iPhone will warn you and stop the operation.

Backup to iCloud / PC allows you to  generate a file that will be able to clone all the contents and settings of your current iPhone to a new model, without any other additional action.

The backup can also be performed on other platforms such as Google Drive, but the contents of the device will be divided (for example between Google Photo, Google Calendar and Google Contacts) and subsequently they will have to be imported separately. Furthermore, that backup will not provide you with the other files (such as applications) present on the iPhone.
